Back in the day when I was a mechanic (before there were 'service techs') at a dealership we always used Lubriplate white lithium grease on speedometer cables. I still use white lithium grease on mine.
Definitely get rid of that flex fan! My nephew lost an eye when a blade flew off of one of those while he was working on a car. The Dr. said that if he hadn't been wearing his prescription glasses it probably would have gotten into his brain and killed him!
Why spend the money on something like that that you may only use one time? If you disassemble the steering shaft as far as he did in his post you are only a few more bolts away from being able to completely remove the assembly and use a regular drill. You will also have a lot more room to work...
The Hellcat engine is a relatively easy swap, pretty much everything you would need is out there on the market and you can definitely use a small block 727. it will bolt right onto the hemi. That being said, I kind of agree with others' comments, I would probably go with the 400 you already have...
