You really can't go wrong with a stroker kit, but since you're in Japan and it's hard to get machine work and parts compared to here in the USA, taller pistons will work.

Yes, if the cam thrust plate was left off (they gave it to you separately?), then all the oil will just go back into the oil pan bypassing the heads, lifters and cam. Path of least resistance for fluid flow.
Go with a Howard's camshaft. You can get one around $250 in just about any lift you want. And use lots of camshaft assembly lube. And check each lifter hole for fitment.
It really isn't that hard, just time consuming because you need to clean all the sealing areas up (timing cover, oil pan, intake mating surfaces, etc.). @Challenger RTA list is very good.
