EFI will always drive better, I wouldn't change it.

Another option is adding a 1/4" shim between engine block and the mount.
But this can create other problems. My speedo cable had to go through the cross member, so I couldn't afford rotating the left side of the drive train further up.
How thick are the manifolds, maybe grind that area a little?
I'd have no problem hitting that stud with a grinder.
You could also slot the steering box mount holes and slide it over a little.
Wish I had your problem, I had to ding header and grind a bevel on 1 of the box bolts and still can...
As mentioned, too many variables. I used a 2016 Challenger radiator that only cost $125, couldn't justify paying $800 or more. So I had to figure out a filler and ended up with a part off a Dakota and 2 hoses cut in half.

Always better off buying the most complete car you can afford. You'll have 3-4x rebuilding that into something worthwhile, compared to buying something finished.
