If you did another car project, what would it be?

I recently bought this 71 Super Beetle, so guess that is my next project! Current project is a 71 Barracuda.

I might take a stab at this $7500 '69 AMX. The original 390 is gone. And someone put a 6 cyl in it long ago. Body is nice. But would make an excellent SS project. 390 2-4 barrel. Solid lift cam at 12.5:1 compression. Just as the SS version of '69. But with today's suspension and gear options? That 3000 lb beast would scream.
