I need to measure but I think my 727 to 8 3/4" driveshaft takes a 7620 type u-joint on each end. Is there a preferred mfg or any to stay away from? PN or supplier recommendations appreciated. Moog for instance has several flavors. Greasable or sealed? Do I "need" the strap/bolt kit too?

Hands down, Spicer solid u-joints. I have the 7260 on my Dart Sport with a billet pinion yoke. They have performed flawlessly for many years of wheels-up launches with 60' as low as 1.47 @ 3,550+ lbs. But I don't have the part # handy. The greasable versions would be good for street applications as well. Just make sure that if the grease fitting is in the u-joint body, it should be under compression while under load. Fitting in the cap are better IMO. (Do confirm the size.)
