Real life, honest to goodness, slow cooked, apple wood smoked barbeque.

The pork butts have been on the smoker for almost 10 hours now. Still got about 12 to go. Low and slow, keeping the temp around 150-200. Got four of 'em to smoke for tomorrow's family Memorial Day get together. Had 'em in a molasses brine for about 12 hours before they went on the grille (my smoker is a large grille with a sidebox for the fire). Homemade rub, consisting of whatever spices I can find in the cabinets that go good together.

Last year I had to cancel it with Sarah in the hospital. (Yes, it's been a year now since we found her tumor.)

This year, it's time to pick up the tradition again, and be surrounded by loved ones.

Smoked meat!... Now you`ve got my attention!!! Sounds like a great time, when do we eat! LOL! Glad to hear you are getting back to tradition and surrounded by friends and family, you deserve it!

Here is a picture of the smoker I made from leftover fittings at a jobsite I was on last year, all stainless steel. I did 1/2 a pork loin in it the other day, the taste was real good but I think the temp was a little bit too hot since the meat was on the tough side, it neeeded more time and less heat. Here is a pic of a Maple smoked Salmon I did a few months ago that came out awesome! It`s so freakin cold out today we are gonna heat up the Fry Daddy`s and do a fish fry with
home-made fries...indoors! Might even break open the mason jar of blueberry `shine I got for my birthday! :eek:ccasion14:

Dan that smoker is more then kool and the salmon looks killer!

Pulled them a little earlier than expected and gave 'em a nice long rest. Fell apart (just like they should) and was nice and juicy.

The rub was a brown sugar base, with a mix of this and that, including cayenne pepper. The bark snuck up on you. A nice sweet nice flavor to begin with then the cayenne came in with a nice kick.

The party itself was good. Everyone had a good time, but my sister and brother-in-law had to leave early to take some friends home. I'm making it up them by having them up this Saturday. Think I'll smoke down some pork ribs.

My niece, Stephanie, and nephew, Jamison, stayed until midnight. I got Jamison an '89 D150 for his 18th birthday and he's loving the independence of being able to come and go when he wants on non-school nights.
