Most of the break in wear happens very quickly. After that it comes down to a few heat and cool cycles. So, in my humble opinion, your engine is seated and you can change the oil at any point now that you like. If your engine was set up with tight, street specs it would be prudent to let it go a little while before flogging it too hard, meaning back to back to back hard pulls, but individual sprints with time between them would be advisable.
When I break an engine in on the engine dyno, we generally run it for 15 minutes or so under light to moderate loads while varying the RPM. Meanwhile, I am making the final adjustments and monitoring the oil pressure and water temp. Then we start working our way up to the full throttle pulls feeling that things are seated enough and making sure there is plenty of time between each pull for the engine to shed that extra heat.
And I always like a strong magnet or two on the oil filter. How much it helps; I don't honestly know. But they are not much money on Amazon and the like and certainly can't hurt anything.
