I have a 1970 CUDA with a 440 Holley EFI - Im questioning myself about if this is a beter solution vs the original six pack. From a performance point of view and resalable value?

Keep the original six pack setup, it'll be worth the trouble to store it if you or a relative sales it down the road.

from a performance point of view...the six pak properly set up with the proper hardware with the proper tune, with the proper tools and instrumentation...that seems to be too much for today's world...will run just as good and out run the efi all day long, never mind the hard acceleration "hit" from the secondaries that efi is incapable of. The devil is in the details and there is no six pak app.......
