I have the Carter 383 fuel pump , the 5/16 outlet points right at my radiator hose , do they make a push on 90 degree adapter for these so I can direct it the opposite way .
I have heard about those but does the psi matter , I think the one I have is 6 psi and the others at 8 psi , if I'm wrong let me know , I'm still learning .The Carter M4589 on your 383 is the correct style for a 1969-1971 383. However, your engine has the 1974-1978 water pump housing which has the inlet on the passenger side that interferes with that fuel pump outlet line routing. A 383 originally had the water pump housing with the driver side inlet, used on 1958-1973 big blocks, such as the one in the following image:

To keep the housing without fuel line interference and without using adapters, use a pump from a 1974-1978 400 application and matching outlet line, such as the Carter M6935 shown in the following image:

Alternatively, use a pump for a 1968 and earlier 383 application such as the Carter M3672 shown in the following image, although there is a little less clearance with this one than the M6935:
