in 71 Mopar used an 800 cfm carb on the 340 , the 750 is perfect for a 383 . If you are going to replace the carb , not sure why I would use a 750 Proform as my first choice .
You need a cam with a 112-114* cl while using stock exhaust manifolds for best results . The 702 should work well .
With the compression you have the short block may be just fine , you might be good just doing cam & heads

It seems rediculous to me that the first cam company that comes up everytime is Comp , in the 70s- 80s we used to make fun of them they were so bad /the worst but relentless advertizing I guess has put them at the top , it is almost as if everyone has forgotten about the 100s of other cam companies & Comp cams do not take advantage of the wider Mopar lifter as I explained in another thread here so they don't do well in Mopar engines .
Use better brands like Lunati Engle Hughes etc !
