If I pull out my sending unit, Can I expect to find the float just does not float anymore, and what options do I have to repair? Resolder it?

It depends on what broke. Is it the original sending unit? You could have developed a leak in the float. If that's the case then yes, it can be repaired by a radiator shop.(If it's not a new plastic float) The internal contact of the unit could be damaged as well...or the unit could be all rusted up. It could even be a problem with the gauge in the dash. If you ground the sending unit wire, the dash gauge should read full if it is working properly.
